Black Bean Hummus Recipe

You can’t go wrong with a Black Bean Hummus recipe, combining my two favorite things-black beans and hummus!!  YUMMY!!!  There are ssooo many ways to make hummus, but my fave is combining it will black beans!  Black beans are loaded with yummy flavors and contains more fiber than chickpeas.  This is great with all types of veggies, celery, peppers, carrots, you can use it in wraps, with tacos, chips, spoonful’s by itself (that may be a little much, but sometimes you can’t help yourself!)    Can’t really go wrong with this recipe this amazing beachbody recipe that is 21 day fix approved too!! Ingredients: 1 (15-oz.) can black beans, drained, rinsed (reserve liquid) ¼ cup low-sodium organic vegetable broth 3 Tbsp. tahini (sesame butter) 3 cloves garlic, coarsely chopped 2 Tbsp. fresh lemon juice Sea salt (or Himalayan salt) (to taste; optional) Ground cayenne pepper (to taste; optional) Preparation: Place all ingredients in a food processor (or blender), pulse until smooth. If hummus is too thick add 1 Tbsp. reserved liquid at a time until hummus is desired consistency. Looking for a quick, healthy, EASY side dish to take to cook outs this holiday weekend??  This 5 ingredient, 5 minute Black Bean Salad is perfect!!  Ssoo good and ssooo easy, what’s not to love? Especially when you need to throw something together last minute, this black bean salad is always a good go-to for any get together or really any night of the week!  Enjoy!! Ingredients 2 cans (15-oz. each) black beans, drained, rinsed 1 (15-oz.) can corn, rinsed, drained 2 medium red bell peppers , chopped ¼ cup finely chopped fresh cilantro ¼ cup fresh lime juice Instructions Combine beans, corn, bell peppers, and cilantro in a large bowl; mix well. Sweet Potato Skins with Chicken and Spinach Recipe

This Sweet Potato Skins Recipe is sure to hit the spot!! Who doesn’t love sweet potatoes….. Especially with a little twist!  It’s healthy, clean and 21 day fix approved… perfect for lunch, dinner or really anytime! Ingredients: 4 baked sweet potatoes, cut in half 1 tsp. olive oil… ½ tsp. sea salt 4 oz shredded cooked chicken breast, boneless, skinless 1 tsp. all-natural taco seasoning, no salt added 1 cup spinach 8 Tbsp. low-fat plain Greek yogurt ¼ cup chopped fresh cilantro 1/2 cup black beans Sprinkle with lime juice Directions: Heat oven to 400° F. Scoop out sweet potatoes and reserve for another use. Then Place skins on a baking sheet, brush with oil and sprinkle with salt. Bake for 10 minutes, or until crisp. While skins are baking, combine chicken and taco seasoning in a small bowl; mix well. Set aside. Spicy Buffalo Cauliflower Bites: 21 Day Fix Approved

Looking for a tasty, but healthy appetizer to take to a cookout?? Craving buffalo chicken wings?? These Spicy Buffalo Cauliflower Bites are SO yummy AND 21 Day Fix approved!!! (1 yellow, 1 green, 1 red) Ingredients: 1/2 head cauliflower, crumbled into bite size pieces 1/2 cup almond flour 3/4 cup almond milk 2 tsp garlic powder Himalayan salt and crushed black pepper to taste 1 cup Sriracha chili sauce 2 tbsp EVOO Directions: Preheat oven to 450 F Whisk together flour, milk, garlic powder, 1/2 cup sriracha, salt and pepper until smooth. (if its too clumpy, you may need to add a little more milk) Dunk your cauliflower bites. Line a baking sheet with parchment paper and drizzle EVOO on it. Use a spoon to place bites onto paper. Pour remaining of sauce on top and bake for 20 min. When cauliflower bites are done, take out and add the 1/2 cup sriracha and 2 tbsp EVOO to the top and bake for another 5 minutes. Serve with Clean Ranch Dressing and celery if you wish!! ENJOY!! XO Erin
