These Pumpkin Spice Oat Pancakes are perfect for a yummy fall morning breakfast! They are a great healthy way to enjoy the pumpkin spice craze and add a twist on the everyday pancake recipe. Ssoooo yummy, filling and healthy way to start the morning off right……kid tested, mother approved!!
Here’s what you need:
2 cups rolled oats (I used gluten free)
1 cup unsweetened coconut milk
1 cup pumpkin puree
1/2 tsp baking powder
1 tsp pumpkin pie spice
1 tsp vanilla
Heat skillet on medium heat. Add 1 tsp coconut oil or use a nonstick cooking spray. Mix all ingredients together with a mixer at medium speed. Drop 1/4 cup of batter into skillet. Let cook for 2-3 minutes, flip and flatten and cook for 2-3 more on the other side. Makes about 10 pancakes! Store in the fridge or freezer and re-heat in the toaster.
Great topped with almond butter a little pure maple syrup!
