Chicken Noodle Soup

 

This is seriously one of the BEST Healthy Chicken Noodle Soup Recipes!! It’s easy, healthy AND 21 Day Fix Approved!! If you aren’t feeling that well or this chilly weather has you craving some warm comfort soup for dinner, put this one on your list asap!!  This can be prepped, cooked and on your table in under 40 minutes!  Recipe from Fixate cookbook!

Ingredients:

2 tsp. olive oil

1/2 cup chopped onion

2 cups sliced celery

4 cups low-sodium organic chicken broth

3 cups chopped rotisserie chicken breast, boneless, skinless

1 1/2 cups sliced carrots

1 tsp. dried oregano leaves

1/2 tsp. sea salt

1/2 tsp. ground black pepper

1 1/4 cup dry whole wheat pasta

1/4 cup chopped fresh cilantro

 

Directions:

Heat oil in large saucepan over medium heat.  Add onion and celery; cook, stirring frequently for 5 minutes or until onion is translucent.  Add broth, chicken, carrots, oregano, salt and pepper.  Bring to a boil, add pasta, reduce heat to low.  Gently boil for 10 minutes, add cilantro before serving.
