Looking for a new idea for lunch or a healthy snack to get you through the day?? These Cucumber Hummus Roll-up’s are an excellent lunch or snack and can easily be made up the night before!!
Take a vegetable peeler and peel off long, thin slices of cucumber. Spread hummus evenly on each slice, top with roasted pepper slices. Roll the cucumber loosely around the filling and secure with a tooth pick! So many variations, you can use red bell peppers, sun-dried tomatoes, herbs, sliced green onions, really anything you have on hand!! You can also use plain greek yogurt, add a small amount of honey and a few coconut flakes too…so good!
