Vanilla Berry Coconut Popsicles

  These Vanilla Berry Coconut Popsicles are AMAZING!!!  Healthy, homemade, easy treat that everyone will fall in love with! Even thought it’s not officially summer, it sure has felt like it these last couple days here in Indiana!!! This is ssooo yummy and makes for a perfect after school treat for the kids (or for yourself!!) Love it’s just 6 simple ingredients that you probably already have at home, one of my fave recipes from Beachbody!!  Enjoy!! Here’s what you need: ⅓ cup nonfat plain Greek yogurt ⅓ cup canned lite coconut milk ½ tsp. pure vanilla extract 3 tsp. raw honey, divided use 2 cups fresh or frozen blueberries ¼ cup water Combine yogurt, coconut milk, extract, and 1 tsp. honey in a medium bowl; mix well. Pour yogurt mixture into ice pop molds; freeze for at least two hours, or until partially set. Place blueberries, water, and remaining 2 tsp. honey in blender; cover. Blend until smooth.  Slowly pour blueberry mixture into ice pop molds; freeze for at least four hours, or until set.

My go-to meal plan is always the 21 Day Fix. It works. It is simple. It is EASY.  This is one of those meals my family could eat once a week and never get tired of it.  We have fallen in love with using ground turkey to make most of our dishes that require ground beef.  Turkey is so much better for you and at the end of the day, is usually better on the budget too. You do need to season it a bit more, but I love to use fresh and dried herbs and my family can never tell a difference.  So, add this meal to your meal plan this weekend or for the week ahead. Turkey Meatballs 1 lb lean ground turkey breast Dash of Himalayan salt 1 tsp of smoked paprika 1 tsp of herbs de provence (favorite spice for everything) 1 large egg, beaten 3/4 cup of quick rolled oats 3 finely chopped garlic cloves 2 tbsp of no sugar tomato sauce Directions: In a medium bowl, mix together, roll into balls, place on a cookie sheet (spray with cooking spray first) and bake for 15-20 minutes at 400. The “OMG! I forgot about dinner!” Quick and Clean Recipe!

Truth: I am struggling this week!  Yep, I haven’t made a meal plan yet and it is Tuesday. My fridge is stocked and I have ideas, but nothing down on paper, so today, around 11:30 am I thought about tonight’s dinner for the first time.  I even tempted my husband with an invitation to dinner out, but he quickly reminded me that we had options at home.  I love having someone holding me accountable to my goals and reminding me of our vow to only eat out once per week. So, tonight, David took over and threw together this main course for our family! He definitely saved the day!  He rocks!  Thanks, babe! We are a family who loves having “breakfast for dinner”, so this was perfect and we already had the turkey sausage thawed in the fridge ready to go. It was super easy and very fast.  My kids thought their “breakfast cupcakes” were totally cool, too!  We paired this with steamed broccoli and greek yogurt.  Easy, healthy, clean.
