Waffles anyone? These Nut Free Banana Bread Waffles are AMAZING!!  They are also gluten free and paleo! Oh my goodness…I needed these! This recipe is from one of my favorite cookbooks, All-American Paleo Table by Caroline Potter. I love bread, I love sweets and I love banana bread!  This week, I omitted gluten, wheat, dairy and sugar consistently from my diet and I seriously feel so much better. I’m already less bloated and woke up with more energy today then I have in a long time. So, it’s pretty clear that listening to my gut is working for me right now on my path to healing these adrenals. But the truth is, I’ve been feeling a little deprived of my usual favorites. Not any longer! I made a big batch of these waffles to have this week!  P.S. Yes, I did add some dark chocolate  chips to the last part of the batter! Homemade Marinade Recipe

This Homemade Marinade Recipe I whipped together for dinner for my Chicken Fajita Quinoa Bowls was AMAZING!!!Marinade Recipe by me. -1 1/2 tsp chili powder -1 tsp cumin -1/2 tsp garlic powder -1/2 tsp ancho chili powder (secret ingredient)-1/4 tsp coriander -1/8 tsp pink Himalayan salt -2 Tbsp olive oil-1 Tbsp fresh lemon juice Slice 2 organic chicken breasts into thin strips, place in a 9×9 glass baking dish or a gallon ziplock bag. Mix the marinade ingredients together in a small bowl and pour over the chicken. Mix thoroughly until the chicken is covered, cover or seal the bag and place in the fridge to set for an hour. In the meantime, Cook your quinoa. Sauté 1/2 sweet onion and 1 red pepper in 1/2 Tbsp olive oil. Wash and chop your Romaine. Cook your chicken in a medium sized skillet over medium heat for 8-10 minutes, untilChicken is cooked through. Assemble your bowl and top with salsa verde! Enjoy! #glutenfree #paleo 1 yellow, 1 red, 2 green

If you LOVE to dip (and who doesn’t?!) this Healthier French Onion Dip recipe is for you!!  It’s one of my fave healthy condiment recipes from Beachbody!  Perfect for dipping your veggies in and you don’t have to worry about all the extra calories and fat with this homemade recipe!!  It’s ssooo good you will NEVER buy store bought French onion dip again!!  This would also be perfect for a party snack too! Here’s what you’ll need: 2 Tbsp. olive oil 4 medium onions, chopped ½ cup low-sodium organic beef broth 2 Tbsp. Worcestershire sauce ½ tsp. garlic powder Sea salt (or Himalayan salt) and ground black pepper (to taste; optional) 2 cups reduced-fat (2%) plain Greek yogurt Directions: Heat oil in medium saucepan over very low heat.  Add onion, cook stirring frequently for about 20 minutes or until onions are soft and golden brown.  Add brother, Worcestershire sauce and garlic powder.  Season with salt and pepper if desired; cook over medium heat stirring frequently for about 5 minutes or until brother has evaporated.  Remove from heat.  Let onion mixture cool completely.  Combine onion mixture and yogurt in a medium bowl; mix well.  Chill covered for 1 hour or overnight.

These Chicken Philly Cheesesteaks are AMAZING!!!  YES this IS on our meal plan and it is NOT a cheat!!  The only problem, we should have doubled it, not enough for my hungry hubby!!  Recipe courtesy of my fave–SkinnyTaste!!      Here’s what you’ll need: 10 oz. boneless skinless thin chicken breast cutlets 1/2 teaspoon garlic powder 1 teaspoon olive oil 1/2 medium bell pepper thinly sliced 1/2 large onion, halved and thinly sliced 8 oz. sliced mushrooms 4 slices reduced-fat provolone cheese 8 oz. whole wheat French bread, split horizontally and cut crosswise into 4 pieces Kosher salt Freshly cracked black pepper   Directions: Preheat oven to 425 or the broiler to low   Season the chicken with garlic powder, 1/4 teaspoon salt and black pepper to taste.  Heat skillet over high heat and spray with cooking oil, add half of the chicken.  Make sure you don’t overcrowd the pan, cook until brown about 1 minute, turn chicken and cook other side for additional 1 minute.  Transfer into large dish and repeat with remaining chicken.   Add 1/2 teaspoon of oil to the hot skillet.  Add bell pepper, onion and season with a pinch of salt and black pepper.  Cook 1 minute…

  If you love Italian food, you are going to LOVE this Skinny Baked Chicken Parmesan Recipe from SkinnyTaste!!  It is amazing and perfect for guests, because it’s quick and easy!!  I haven’t met a person who doesn’t fall in love with this recipe!  You can serve over pasta, or just skip the pasta and serve with asparagus or a salad! Here’s what you’ll need: 4 chicken breast, sliced in half to make 8 3/4 cup seasoned breadcrumbs (I used whole wheat) 1/4 cup grated Parmesan cheese 2 tbsp butter, melted (or Extra virgin olive oil) 3/4 cup reduced fat mozzarella cheese 1 cup marinara cooking spray Directions: Preheat oven to 450°. Spray a large baking sheet lightly with spray.  Combine the breadcrumbs & parmesan cheese in a bowl and mix together. Melt the butter in another bowl (or use olive oil and brush the butter onto the chicken.  Then dip the chicken into breadcrumb/parmesan cheese mixture.  Place on baking sheet and bake for 25 minutes.  Flip the chicken, top with marinara on each piece and a sprinkle of shredded mozzarella cheese.  Bake for 5 more minutes.

This Greek Chicken Sheet Pan Dinner Recipe is perfect for a weeknight dinner!!  It’s quick, easy, made in one pan for less mess to clean not to mention packed with flavor and  ssoooo good!!  This recipe is from one of my favorite cookbooks-SkinnyTaste Fast & Slow, love it!!   Just toss everything together and bake it and it’s ready to go in 30 minutes total!!  The best kind of recipes! Here’s what you need: 2 lemons 4 boneless skinless chicken thighs 1 lb baby red potatoes, cut into 1/4 inch thick slice 12 oz. of heirloom carrots 2 tablespoons olive oil 4 teaspoons fresh oregano leaves 1 1/4 teaspoons kosher salt 1 teaspoon garlic powder 1 1/2 oz. feta cheese, grated 1 tablespoon grated lemon zest Freshly ground black pepper Directions Slice 1 of the lemons into 1/4 inch thick rounds, cut the 2nd lemon in half. In a large bowl, combine the chicken, potatoes, carrots, juice from 1/2 lemon, the olive oil, 3 teaspoons of the oregano, 1 teaspoon of the salt, garlic powder and pepper to taste.  Toss well using your hands to everything is evenly coated.
