Spicy Roasted Lemon Brussels Sprouts

  These Spicy Roasted Lemon Brussels Sprouts are seriously A-mazing, packed with flavor and easy to make!! A little spice, with a touch of lemon and hint of garlic, YUM!! You hear people say all the time they don’t like Brussels Sprouts, but they just haven’t had them cooked right!!  These are hard not to fall in love with and make for a great healthy side dish! Here’s what you’ll need for this recipe: Brussels Sprouts olive oil 1 tsp sea salt  dash of red pepper flakes dash of freshly ground black pepper 1 lemon 1-2 cloves of garlic Preheat oven to 450 degrees F. Lay brussels sprouts (ends cut off and cut in half) on baking sheet. Drizzle with olive oil, sea salt, ground pepper, red pepper flakes and 1-2 cloves of minced garlic and give it a good mix.  Place the baking sheet into the oven and roast for 15 minutes. Remove and mix the brussels sprouts to make sure they are roasting evenly and place back in the oven for another 15 minutes. This Homemade Marinade Recipe I whipped together for dinner for my Chicken Fajita Quinoa Bowls was AMAZING!!!Marinade Recipe by me. -1 1/2 tsp chili powder -1 tsp cumin -1/2 tsp garlic powder -1/2 tsp ancho chili powder (secret ingredient)-1/4 tsp coriander -1/8 tsp pink Himalayan salt -2 Tbsp olive oil-1 Tbsp fresh lemon juice Slice 2 organic chicken breasts into thin strips, place in a 9×9 glass baking dish or a gallon ziplock bag. Mix the marinade ingredients together in a small bowl and pour over the chicken. If you LOVE to dip (and who doesn’t?!) this Healthier French Onion Dip recipe is for you!!  It’s one of my fave healthy condiment recipes from Beachbody!  Perfect for dipping your veggies in and you don’t have to worry about all the extra calories and fat with this homemade recipe!!  It’s ssooo good you will NEVER buy store bought French onion dip again!!  This would also be perfect for a party snack too! Here’s what you’ll need: 2 Tbsp. olive oil 4 medium onions, chopped ½ cup low-sodium organic beef broth 2 Tbsp. Worcestershire sauce ½ tsp. garlic powder Sea salt (or Himalayan salt) and ground black pepper (to taste; optional) 2 cups reduced-fat (2%) plain Greek yogurt Directions: Heat oil in medium saucepan over very low heat.  Add onion, cook stirring frequently for about 20 minutes or until onions are soft and golden brown.  Add brother, Worcestershire sauce and garlic powder.  Season with salt and pepper if desired; cook over medium heat stirring frequently for about 5 minutes or until brother has evaporated.  Remove from heat.  Let onion mixture cool completely.  Combine onion mixture and yogurt in a medium bowl; mix well.  Chill covered for 1 hour or overnight.

These Chicken Philly Cheesesteaks are AMAZING!!!  YES this IS on our meal plan and it is NOT a cheat!!  The only problem, we should have doubled it, not enough for my hungry hubby!!  Recipe courtesy of my fave–SkinnyTaste!!      Here’s what you’ll need: 10 oz. boneless skinless thin chicken breast cutlets 1/2 teaspoon garlic powder 1 teaspoon olive oil 1/2 medium bell pepper thinly sliced 1/2 large onion, halved and thinly sliced 8 oz. sliced mushrooms 4 slices reduced-fat provolone cheese 8 oz. whole wheat French bread, split horizontally and cut crosswise into 4 pieces Kosher salt Freshly cracked black pepper   Directions: Preheat oven to 425 or the broiler to low   Season the chicken with garlic powder, 1/4 teaspoon salt and black pepper to taste.  Heat skillet over high heat and spray with cooking oil, add half of the chicken.  Make sure you don’t overcrowd the pan, cook until brown about 1 minute, turn chicken and cook other side for additional 1 minute.  Transfer into large dish and repeat with remaining chicken.   Add 1/2 teaspoon of oil to the hot skillet.  Add bell pepper, onion and season with a pinch of salt and black pepper.  Cook 1 minute…
